
Lemon Blueberry Cheesecake!
I nabbed this recipe here: Tyler Florence’s Lemon Blueberry Cheesecake Bars.
& made a few modifications to make it more than a little bit healthier.
Healthy Substitutions List:
16 ounces low-fat cream cheese, room temperature
1/2 cup egg whites
2 lemons, zested and juiced
1/2 cup Splenda
1 1/2 cups fresh blueberries
After that, I followed the original cooking instructions pretty much to the letter — except swapping out for a heart-shaped tin instead! Careful, they puff all over. Yummy and very healthful.
